Observation: Automatic quat dispensing mechanism at the 3 compartment sink is not dispensing the correct amount of quat sanitizer. Sanitizer dispensed tested at approx. 100ppm. Must be a minimum of 200ppm
Corrective Action(s): Until technician has come in to repair the unit , add concenttrated quat sanitizer to the sanitizing sink by hand. Use the quat test strips to verify that a minimum of 200ppm quat is present.
Premises is to resanitize all utensils.
Add quat concentration monitoring to your daily log as discussed

Initially both the hot and cold water shut off valves were turned off at the 3 compartment sink. These were turned back on at time of inspection
Corrective Action(s): Contact technician to repair the quat dispensing mechanism.
Both hot and cold water valves are always on when in operation

****Monitoring logs not being maintained for documenting the concentration of the quat sanitizer at the 3 compartment sink. This is to be done daily using your test strips to verify a minimum of 200ppm quat is being dispensed.
