308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: High temperature dishwasher did not achieve the sanitizing standard. Dishwasher final rinse temperature was less than 71 degrees C at the utensil level (measured at 68 degrees C, 70 degrees C, and 65 degrees C upon three runs). Dishwasher had been turned on approximately 1 hour ago prior to the inspection according to staff. Dishwasher is used for ware-washing trays according to the Store Co-Manager.
Corrective Action(s): Re-service/repair high temperature dishwasher to achieve the sanitizing standard - i.e. dishwasher final rinse temperature of at least 71 degrees C at the utensil level; Correct within 1 week and contact the Environmental Health Officer for a follow up inspection.

In the interim, ensure all trays, equipment, preparation utensils, and food contact surfaces are manually washed, rinsed, sanitized in 200 ppm QUATS sanitizer via the 3-compartment sink method, and air dried. 3-compartment sink was observed to be properly setup for manual ware-washing at the time of inspection.
