Observation: Product temperatures in the front area self-serve cooler (which contains milk, salads, sandwiches, and pop) measured 14 C with the 'curtain' in the 'down' position to enable customers to see and choose product. With the 'curtain' in the 'up' position for at least one-half hour, measured product temperatures settled at 6 C to 7 C.
Corrective Action(s): Refrigerated food must be maintained below 4 C. Adjust the thermostat on this cooler to achieve product temperatures of 4 C at all times that product is being displayed and when the 'curtain' is down in the self-serve mode. If the product temperature cannot be maintained below 4 C with the 'curtain' down, the cooler must be serviced or replaced.

Well maintained and operated. Sanitation is very good. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. No hot-holding at time of inspection. Dishwasher final rinse temperature measures 73 C. Spray sanitizer measures 200 ppm Cl. Wiping cloth (chemically treated Quix Plus sanitizing towels are in use) sanitizer measures 200 ppm Q. Premises complies with the Transfat regulation. No recommendations.
