301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1) Bleach sanitizer used to wipe the coffee attachment was less than 50ppm.
2) No bleach sanitizer was available in the food preparation area. Operator stated surfaces are cleaned at the start of each morning.
Corrective Action(s): 1) Bleach at 100ppm is required to properly sanitize food contact surfaces. Bleach was added to the container at the time of inspection and was measured at 100ppm.
2) Bleach sanitizer must be available in the food preparation area to allow food contact surfaces to be sanitized between uses. Bleach sanitizer at 100ppm was prepared at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Operator had a cloth drying towel around the waist, which was changed daily.
Corrective Action(s): Discontinue the practice of using cloth wiping clothes. Hands must be washed/dried using a single use method of hand drying to prevent potential cross contamination. Operator discontinued use of the cloth towel at the time of inspection.

Observation: Operator had home made food for personal consumption stored in the upright freezer with foods sold in the facility.
Corrective Action(s): All foods must be from approved sources. Home made foods must be either stored in a designated marked container stating for personal use or must be removed from the premises.

Comments

-Sandwich prep cooler was at 3C (top and bottom).
-Upright cooler was at 4C.
-Display cooler was at 3C.
-Dairy cooler was at 4C.
-Under counter cooler was at 4C.
-Upright freezer was at -12C.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Blender containers are sanitized in the high temperature dishwasher after each use.
-Ice machine was clean and sanitary.
-Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
