Observation: 1. Organic and water liquid noted in the soda gun holder - unit closest to the bar dish machine.
2. Pink organic buildup noted on the head of the soda gun dispenser - unit closest to the washrooms.
Corrective Action(s): Clean and sanitize both soda gun dispensers and holder. Maintain as per your Sanitation Plan after deep cleaning.

Observation: No iodine detected at the low temperature bar dish machine.
Corrective Action(s): Do not use the bar dish machine until it has been service and at least 12.5 PPM - 25.0 PPM iodine residual can be detected at plate level after washing. Please use the main dish machine for the time being.

Observation: 1. Excessive encrusted buildup noted on the floor below the main dish machine area.
2. Dust and debris noted along the coil of the dish sink sprayer.

4. Debris noted on the floor below the rack holding cleaned cutting boards.
Corrective Action(s): Please perform a deep clean and sanitation in the abovementioned areas and maintain the cleanliness as per your Sanitation Plan.

Observation: No iodine detected in the low temperature bar dish machine.
Corrective Action(s): Manager called in their chemical representative to service the dish machine during the inspection.
12.5 PPM - 25.0 PPM iodine residual must be detectable at plate level before the dish machine can be used again.

Observation: 1. **Issue previously stated on the last inspection report**
Missing paper towel dispenser at the cookline handwash station.
2. Missing/ worn caulking noted along the back of the handwash sink basin in the cookline station.
3. Broken door gasket noted in the upright freezer - unit beside the walk-in cooler.
Corrective Action(s): 1. Operator must install a proper paper towel dispenser at the cookline station as this issue was mentioned more than 6 months ago. Paper towel dispenser protects the paper towel and avoids the paper towel from being contaminated before the food handlers use it for drying their hands.
2. Recaulk the handwash sink basin in the cookline station.
3. Replace the torn door gasket - a broken gasket is not only inefficient for the freezer to maintain its cold temperature but also makes it impossible to adequately clean and sanitize.

Routine inspection conducted today:
Handwash stations (including washrooms) accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Food stored protected and in the proper storage hierarchy.
Hot food was being held at over 60.0C.
Interior of the ice machine was noted in excellent sanitary condition.
QUAT sanitizer spray bottles and container available in the prep area. All noted with 400 PPM QUAT.
Low temperature dish machine was noted with 50 PPM chlorine residual.
Overall sanitation and organization has improved - keep up the good job.
No signs of pest activities noted during the inspection. Side door was kept closed at the start and during inspection.
