Observation: Chemical dishwasher is in the process of being replaced by a high temperature dishwasher. This is no acceptable means of properly cleaning and sanitizing equipment and utensils.
Corrective Action(s): Facility must install high temperature dishwasher properly and must be able to achieve a minimum sanitizing temperature of 71C on the dish surface on the final rinse. Public Health Act Closure Order has been issued to the facility.

Comments

-Follow-up inspection to March 14, 2019.
-Hot potentially hazardous are being cooled in baskets with spaces to allow for air circulation, but the containers are still too full. Internal temperature of foods was at 6C. Only fill containers half full.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods were properly covered with food grade materials to prevent potential contamination.
-Knives were properly stored at the time of inspection.
-Raw meats were properly stored below ready-to-eat foods in the walk-in cooler.
-Did not observe foods stored in opened cans at the time of inspection.
-Scoops were properly stored in a sanitary manner at the time of inspection.
-Foods were stored off the floor at the time of inspection.
-Did not observe cardboard lining the flooring area at the time of inspection.
-Facility has been issued a Public Health Act Closure Order for improper cleaning and sanitizing of equipment and utensils. Conditions of the Public Health Act Closure Order must be met prior to reopening to the public. Contravention of the Public Health Act Closure Order will result in the issuance of a violation ticket.
