Observation (CORRECTED DURING INSPECTION): Fish thawing in 2-compartment sink under cold, running water, but water level was not high enough and some of the fish was sitting in room temperature. Temperature of fish was measured to be between 0C and 2C.

Corrective Action(s): Water level was raised at time of inspection to ensure all fish was submerged under cold running water at less than 4C.

Observation: Floors in corners and in water tank area require cleaning again.
Floor in walk-in cooler in adjacent storage unit still requires cleaning.
Interior of upright coolers for raw fish and chicken require cleaning and sanitizing.

Corrective Action(s): Clean and sanitize the interior of all refrigeration units at least weekly.
Clean floors more frequently and continue to monitor for pest activity. Clean kitchen floors daily, ensure to pull out equipment so that hard-to-reach areas/corners can be cleaned.

- Only a small portion of tartar sauce, cut onions and cabbage were stored at room temperature for packing take-out orders - Good. **Ensure to discard leftovers if not used within 2 hours.
- No dirty knives or utensils found in storage areas
