302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Four spray bottles of sanitizer and one container with wiping cloths were tested and found to have either no detectable or almost no detectable (0 to 100 ppm) quaternary ammonium compounds (quats) sanitizer. Note: 200 ppm quats is required for effective sanitizing, as stated on the sanitizer concentrate jug label.
Corrective Action(s): Quats spray bottles and one container were emptied, rinsed, and filled with a 100 to 200 ppm chlorine sanitizing solution (bleach water). Ensure all food contact surfaces (e.g. counter tops) are resanitized. Ensure sanitizer is always available at the correct concentration for effective sanitizing of food contact surfaces. Concentration should be verified with appropriate chemical test strips that are within expiry.

Observation: Several small flies observed in the following areas:
1. Dry storage room
2. Mop sink located adjacent to dry storage room
Note: Contracted pest control is in place.
Corrective Action(s): Ensure effective measures are in place to reduce pest populations. Pests may potentially lead to contamination of food and/or food contact surfaces. Date to be corrected by: November 17, 2019.
Note: Food was observed to be covered and no spills/food debris observed in these areas at the time of inspection. Screen door was observed to be closed.
Note: Drain treatment may be required--consult with licenced pest control operator. Follow recommendations provided by licenced pest control operator.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Quaternary ammonium compounds (quats) was tested at almost no detectable quats from the sanitizer dispenser (0 to 100 ppm quats). Liquid within quats sanitizer concentrate jug was observed to be cloudy and white.
Corrective Action(s): A new quats sanitizer jug was put in place at the dispenser and the dispenser line was flushed by staff. Sanitizer from dispenser was still testing at 0 to 100 ppm quats. Note: Liquid in sanitizer concentrate jug observed to be clear.
Ensure dispenser is capable of dispensing sanitizer at the required concentration for effective sanitizing of food contact surfaces (e.g. 200 ppm quats). Do not use dispenser until such time--continue to use an alternate sanitizing method (e.g. 100 to 200 ppm chlorine). Ensure all staff are aware that dispenser is not to be used--provide signage on dispensing unit stating it is out of order. Date to be corrected by: Today.

High temperature dishwasher measured 75 degrees C at the utensil surface during the final rinse (requirement: 71 degrees C or more at the utensil surface)

FOODSAFE requirements met at time of inspection. FOODSAFE certificate produced for staff member on site is valid to 2021.
Note: Staff on site unable to locate temperature logs at time of inspection. Ensure temperature logs are accessible and maintained as per your food safety and sanitation plans.
