Observation (CORRECTED DURING INSPECTION): After the first run, low-temperature dishwasher had 0 ppm chlorine detected at plate surface level after final rinse
Corrective Action(s): Instructed operator to prime the sanitizer line; greater than 50 ppm chlorine detected after final rinse. *Ensure to monitor sanitizer concentration with test strips daily.

Comments

- All hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- 3-compartment sink was set-up for manual warewashing
- 200 ppm quat detected in 3-compartment sink, at main dispenser, and in several sanitizer buckets
- Walk-in cooler was at 2C, undercounter coolers and inserts at top were at or below 4C; vertical cooler holding beverages and sauces was below 4C
- Upright freezer was at -16C
- All hot held items were above 60C
- Temperature records well maintained and up to date
- Food storage practices satisfactory; all food stored covered, scoops were stored properly
- General sanitation good, equipment maintained in sanitary conditions
- No signs of pest activity at time of inspection
