Code 301 noted on Routine inspection # CPAK-CRHUES of May-02-2023 Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] Observation: Mouse droppings observed on sushi prep shelves, on dishes, on food prep counter in the back, next to knives, inside bowls etc. High risk of cross contamination and transmission of disease. Correction: Wash/rinse/sanitize all above noted areas and entire premises.

Follow-up inspection conducted: - All dropping have been removed. Areas have been sanitized. - All dishes stored on storage shelves/under cooking units have been washed/sanitized through the dishwasher. - Professional pest control company contracted. Inspection frequency had been changed to biweekly until situation improves. Yesterday's inspection report provided to the health inspector at this time. **EVERY MORNING before initiating any food prep in the facility, - all droppings must be removed from any food prep areas - all prep surfaces must be sanitized using 200ppm chlorine - all dishware/utensils must be properly covered or stored in pest proof containers for overnight storage Operator to send a copy of the pest control inspection reports for the next month. Closure Order issued on May 2 had been rescinded.
