Observation (CORRECTED DURING INSPECTION): Various potentially hazardous foods (meats, chopped vegetables) were stored in the small prep cooler maintaining ambient temperatures of 7C. Food temperatures were measured at 5C.
Corrective Action(s): Move all potentially hazardous foods in this prep cooler to the walk-in cooler.

Observation: Small prep cooler is maintaining ambient temperatures of 7C. The ambient temperature was stable throughout the duration of the inspection.
Corrective Action(s): Repair the prep cooler so it is capable of maintaining ambient temperatures of 4C or less. Do not store any potentially hazardous foods in this cooler until then.

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, undercounter, stand-up, large prep, drawers) at < or = 4C
- Freezers (walk-in, drawers) at < or = -18C
- High temperature dishwasher is available. Final rinse temperature reached 71.0C at the plate level (Minimum 71.0C). Recommended to adjust the temperature higher during the next service to allow for a safety margin.
- 200 ppm Quat sanitizer available in spray bottles
- Temperature monitoring is in place
- Ice machine is clean. Ice scoop is stored in a sanitary manner.
