Observation (CORRECTED DURING INSPECTION): Delivered boxes of raw meat on metal trays stored above cooked chickens. All to be cooked prior to be served. Raw meats moved to the bottom shelves at this time.
Corrective Action(s): Ensure all raw meats are stored below and away from ready to eat foods (i.e. veggies/cooked food) to avoid contamination.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures within requirement.
-General food storage practice satisfactory, except mentioned above. Dry storage area satisfactory.
-200ppm QUAT available in a bucket to hold wiping cloths and at the automated dispenser.
-High temperature dishwasher achieved 79.1'C at the plate level after final rinse.
-Ventilation canopy hood serviced and maintained.
-Tools in drawers maintained in sanitary condition.
-Traps in place. No evidence of pest activity observed.
-General maintenance and sanitation level of the facility good.

NOTE: Recent pest control company report to be checked during the follow-up inspection.
NOTE: Temperature recording system discontinued since January 2018. Ensure all coolers/freezers/dishwasher are checked on a daily basis. Record them on a log and keep them on site for review.
