Observation (CORRECTED DURING INSPECTION): Bleach in the 3 compartment sink set up for sanitizing, was detected at 50ppm (required 100ppm). Staff was using a cap of 33% bleach concentration to make the bleach water.
Corrective action: Staff made bleach water to be at 100ppm. Ensure to follow the dilution procedure in the hand out provided. Check the concentration using chlorine test strips if available.
Health rationale: Adequate sanitization using the approved sanitizer at the proper concentration to facilitate proper sanitization of food contact surfaces.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Ventilation canopy was observed with dust and grease build-up. Staff informed that a professional cleaning company is scheduled to come in within a week.
2. The wall under and near the front hand sink was demolished due to renovation. Staff informed that the walk-in cooler and walk-in freezer was moved near the hand sink to provide more space. The area is scheduled to be repaired with in a week.
Corrective actions:
1. Clean the ventilation canopy. Ensure to regularly clean ventilation canopy and hard to reach areas.
2. Fix/repair the walls underneath the front handwashing station.
Health rationale: Grease built-up and open areas on the walls may attract potential pests and contaminate food.

Observation: Staff on duty was not FOODSAFE level 1 or equivalent certified. FOODSAFE level 1 certified operator was not on duty.
Corrective action:
1. Register staff members to complete FOODSAFE Level 1 or equivalent training.
2. Make copies of the completed training certificates for the follow-up inspection. Ensure at least one staff on duty is FOODSAFE level 1 or equivalent certified.
Health rationale: Staff must be FOODSAFE level 1 or equivalent certified to operate the facility in a safe and sanitary manner in accordance with the legislative requirements and to ensure food safety.

Comments

Routine inspection was conducted. The following was observed.

1. Temperatures
All coolers (walk-in, prep coolers, beverage cooler) at 4C or less.
Walk-in freezer at or below -18C.
No products were hot held.
Refrigeration units were supplied with a thermometer.

2. Sanitation
All handwashing stations are accessible and equipped with hot and cold running water, liquid soap and paper towels.
3 compartment sink with drain plugs available. Reviewed manual ware washing procedures with the staff.
Chlorine test strips were not on site Recommend acquiring test strips to monitor chlorine concentration at 100ppm.
Overall sanitation satisfactory. Ensure to clean hard to reach areas frequently. (see violation code 306 above).

3. Storage
All foods were covered and stored above floor at least 6 inches.
Dry foods are stored in pest proof containers.

4. Pest activity
No visual signs of pests during the inspection.
Pest control program in place on biweekly basis.

5. Administrative
Permit was posted at the front.

NOTE: Ensure to notify the district EHO in the case of new changes to the facility to acquire approval.
