Observation (CORRECTED DURING INSPECTION): No surface sanitizer available at beginning of inspection.
Corrective Action(s): Bleach water sanitizer was prepared and measured at 100 ppm chlorine. Wiping cloths stored in sanitizer. Please ensure that bleach water sanitizer is available at all times during operating hours to limit the potential for cross contamination.

Observation (CORRECTED DURING INSPECTION): 1. Mesh bag of onions found stored on floor in kitchen.
2. Multiple open metal cans of food observed in walk in cooler.
Corrective Action(s): Ensure that onions are not stored directly on the floor to protect from potential contamination. All foods should be stored off the floor to facilitate proper cleaning.
Ensure that once opened, canned foods are transferred to a food grade container.

Observation: Multiple flies observed in kitchen area.
Corrective Action(s): Ensure that control measures are in place to limit fly populations. Ensure that any potential food sources or breeding areas are removed to limit fly populations. Remove empty soda cans and standing water in utility sink. If control measures are not effective, have a professional pest control company contracted. Screen door is in place at back door--closed at time of inspection. Date to be corrected by: One month.

Observation: Food debris and/or grease observed in the following areas:
1. On front and inside of ventilation hood canopy, as well as on baffles.
2. On shelves to right of cook line.
3. On central shelving unit.
4. In dishwashing area (shelves, floor) and inside/under utility sink
5. Inside of prep cooler and white reach in cooler (kitchen)
6. Underneath all equipment.
Corrective Action(s): Ensure the above noted areas are properly cleaned and sanitized. Food debris and/or grease may attract pest activity and potentially contaminate food. Ensure that any open bags are transferred to pestproof food grade containers. Ensure that storage is well organized and any items not required for business use are removed. Date to be corrected by: December 1, 2017.

- Prep cooler at 2 degrees C (above, below)
- Reach in domestic cooler at 3 degrees C. Freezer compartment at -19 degrees C.
- Front mini cooler at 2 degrees C
- Front glass cooler at 4 degrees C
- Walk in freezer at -18 degrees C
- Front reach in freezer at -16 degrees C
- Thermometers available for cooler units
- Hot holding rice at greater than 60 degrees C
- Low temperature dishwasher measured 48 degrees C and 50 ppm chlorine in rinse residual. *Reminder: Sanitizer jug is running low--please ensure you continue to monitor chlorine concentrations daily with the test strips on site. Additional sanitizer jugs are available.
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Ice machine appears in sanitary condition. Ice scoop stored on cloth--removed at time of inspection. Ensure ice scoop is sanitized and is always stored in a clean, dry container.
*Reminder: Ensure that temperature records are maintained for all cold holding units (not just the walk in cooler)
