-General sanitation is satisfactory
-Handsinks supplied with liquid soap and paper towel
-Walk-in/chicken prep cooler was at 0C
-Deli meat display cooler was <4C
-Display cooler were 4C and colder. Product level was satisfactory. (no overstocking of coolers noted)
-Hot holding of barbecue chickens was >60C *Ensure bbq chickens are transferred rapidly from cooking to hot holding so that temperature does not drop below 60C. At the time of the inspection, cooked chickens were noted on the counter to be packaged for transfer to hot holding; however, staff member was occupied serving customers. Once notified, staff completed process. Temperature of chicken was still >60C.
-Temperature records were up to date.
-Quats sanitizer present at 3 compartment sink and in spray bottles for sanitizing dishes and food contact surfaces.
-Discussed cleaning and sanitizing frequency for meat slicers. Deli manager reported that meat slicers are cleaned/sanitized every 2-3 hours; however, no procedure is in place to ensure this is complete or documentation to indicate when this was last complete. Schedule/procedure should be in place to ensure meat slicers are cleaned/sanitized every 4 hours (minimum).
-No signs of pest activity noted at the time of the inspection.
