Observation (CORRECTED DURING INSPECTION): Staff indicated the dishwasher was out of service at the time of inspection. Staff did not display adequate knowledge about manual warewashing.
Corrective Action(s): - Sanitizer solution was set up in the three compartment sink. The sanitizer solution registered between 100-200 ppm chlorine.
- Reviewed the steps for three-compartment manual warewashing with staff
- All dishes, utensils and equipment are to be washed, rinsed, sanitized and air dried

Observation: Vent hood and metal vent grates observed with grease and oil build up. The wall behind the cookline also has grease and oil build up

Observation: Staff indicated that the dishwasher does not work and is out of order. Staff indicated they have attempted to get a technician to come in for the past week.
Corrective Action(s): - Contact technician to repair or replace current dishwashing unit
- Ensure that the dishwashing unit adequately sanitizes utensils
- Update district Health Inspector when dishwasher is expected to be repaired or replaced
