402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Kitchen staff member observed washing dishware with single use gloves, followed by handling equipment and containers without changing gloves.
Corrective Action(s): Single use gloves must be changed when they become potentially contamination to prevent cross contamination. Review with staff proper glove usage and hand hygiene practices.

Comments

-Follow-up inspection to June 6, 2018.
-Sprouts were stored in an ice and water mixture at the time of inspection and sprouts were at 4C.
-Rice was greater than 60C at the time of inspection. All rice from the previous night is now rapidly reheated in the microwave to 74C before hot holding in the rice cooker.
-Slicer was found to be clean and sanitary at the time of inspection.
-Quats sanitizer solutions were in properly labelled containers and tested at 200 to 400ppm.
-Door sweep has been installed in the back door.
-Bleach container still needs to be elevated to properly feed bleach sanitizer. Operator is currently looking for replacement parts. Bleach bottle is currently secured at an elevated level and dishwasher sanitizer strength is tested daily to verify at least 50ppm bleach is detected in the final rinse cycle.
-Signage has been placed at the front handwash station to inform staff sink is only for handwashing.
