Clean the floor under the drying rack. Clean all the way to the wall when cleaning the floor and ensure that debris are not pushed to the back. Thaw packages of samosas in the cooler rather than in the fridge. Victory produce wash is being used to clean the fruits for use in the fruit salads. Ensure that the concentration of the solution is appropriate by verifying with test strips or test kits. Handwashing stations are satisfactory. General sanitation is good.
