Observation (CORRECTED DURING INSPECTION): 1) Noted the pickled veggie/cabbage being stored in the ice water bath. However, not enough ice cubes. Only the bottom of the pickled cabbage were being cold held.
2) Bean sprout @ 17 deg. C. --> Discarded during inspection
Corrective Action(s): 1) Ensure the container gets fully inserted in the ice cube/ice water bath as deep as possible to cold hold contents.
--> Recommend to use a larger ice water-bath tub to create more room for insertion.
2) Bean sprout must be cold held @ <=4 deg. C at all times
--> put the bean sprout in the cooler or under cold running water, or in an ice water bath.

Observation (CORRECTED DURING INSPECTION): Noted two packs of beef slices being defrosted out at room temp. Temperature of the beef slices were at 6 deg. C
Corrective Action(s): Do not leave frozen products out at room temp. to thaw. This will cause partial thawing.
--> Defrost in a cooler or under cold running water.

1) Deep fryer: Remove grease build-ups on the surface of the unit and underneath
2) Stainless steel panel behind the stove: Remove grease.
3) White small freezer door: Remove gunk and grime off the surface.
