Comments

Dishwasher repair person on site during inspection
- was able to adjust booster temperature to meet minimum 71C at dish, however, booster is running with one broken element and will require repair/servicing to ensure proper working order of dishwasher.

Dishwasher can be run for at least 4 trays and holds temperature at 72C currently at dish.

Operator to monitor temperature gauges during time of operation to ensure it reaches 82C at manifold at final rinse cycle during runs.

Follow up inspection scheduled in one month for the booster. If during that time the dishwasher is not reaching 82C at manifold use the bleach dip and/or have serviced to maintain at least 72C at dish.
