Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher final rinse temperature noted between 57 and 60 C. Must get to at least 71 C at plate. Indicating guages on machine display proper operating ranges for both wash and rinse cycles. Mineral diepsoits noted inside and may be affecting water flow.
Correction: Have dishwasher technician called and have servicing completed. Make sure unit achieves and can maintain temperatures at least at 71 C at the plate at all times.
**As temporary measure all dishes go through manual sanitizing step implemented. Use one of the sinks with proper sanitizing solution as per dishwashing sign provided.
Follow up inspection required and date noted on report.
