Observation (CORRECTED DURING INSPECTION): Two knives were stored in the gap between two prep counters.

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher was dispensing sanitizer at 10 ppm.
Corrective Action(s): Switch out the sanitizer for a new container. Sanitizer concentration measured at 50 ppm afterwards. Date to be corrected by: Immediately

Observation: Several open bags of flour in the dry storage area. Scoops were stored inside the bags.
Corrective Action(s): Operator will obtain secure bulk food bins for the flour in the near future. Until then, seal up the bags if not in use. Store the scoops outside the bags to avoid potential contamination from the handles. Date to be completed by: Immediately

Observation: Accumulation of debris on the floors in the dry storage area. Most of the debris is underneath the shelving units and along the walls.
Corrective Action(s): Clean and sanitize all noted areas. Date to be completed by: September 10, 2018

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, prep, drinks) at < or = 4C
- Freezers (walk-in) at < or = -18C
- Hot holding (rice) at > or = 60C
- Low temperature dishwasher in use. Chlorine sanitizer dispensed at 50 ppm during the final rinse (After switching out the sanitizer).
- Three compartment sink available for manual dishwashing
- 100 ppm bleach sanitizer available in spray bottles and bucket with wiping cloths

*Start measuring the dishwasher sanitizer concentration using test strips at least twice per day. Record the results in a log and keep on site for review.
*Ensure pest control reports are kept on site
