Routine inspection

- All hand washing stations are supplied with hot and cold running water, liquid soap, and air dryers.
- Food contact surface sanitizers used. Surface and sink sanitizer measured at 272 ppm and it is in range at the time of inspection. Ecolab visits the site once a month for regular maintenance of sanitizer dispenser. Reviewed product specifications at time of inspection. All chemicals supplied by Ecolab.
- Monthly QC inspections are done in-house.
- All storage bins/ maintained in sanitary conditions. Flours/ ingredients are stored off the floor in sanitary condition.
- Area for yeast tanks maintained in sanitary condition. No pest issue noted in this area. Pest management / inspections is conduct by a pest company.
- Facility is audited by BRC annually.

- General sanitation satisfactory in production plant.
Reminder: Cottonwood fluffs and bread debris are observed to be under some equipment in the production line and near truck loading base. Ensure that cottonwood fluffs are vacuumed and bread debris removed.

- All staff wore hair nets, clean aprons and observed to be in good hygiene conditions. Screening is conducted for staff and visitors.
- No obvious sign of pest activity noted at this time.
- The bakery has in-house food safety and sanitation plan.
- Sanitation logs are up-to-date.
- Conveyor belts of production equipment maintained in good conditions.

- Air strip curtains maintained in good conditions.
- Bread pans/trays are sent off-site for cleaning and re-finishing
