Observation: Corner area next to chest freezer below shelving unit and floor area around safe impacted by rodent activity - chewed debris and mouse droppings.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.
Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine) after cleaning.

2 hour monitoring system in place for displayed pizza slices.
Food utensil / food preparation surface clean and sanitizing scheduled every 90 minutes.
3 compartment sink correctly set up for manual dishwashing process.
Discussed complaint received Feb 20, 2018 regarding customer reporting mouse activity in seating area the evening of February 17, 2018. Premise operator is aware of the incident. Monthly pest control service has been escalated to every 2 weeks. Operator has taken measures to pest proof front service area to exclude entrance of pests.
Ensure premise sanitation is maintained on a daily basis. Areas of rodent activity are to be sanitized using dilute bleach after cleaning.
