Observation: Staff are making yogurt on-site with no accepted food safety plan. Staff were unable to explain the critical control points in yogurt production.
Corrective Action(s): Please submit a food safety plan prior to making yogurt on-site. Do not use the boiled milk for making yogurt.

304 - Premises not free of pests [s. 26(a)]
Observation: Lots of flies (larger house flies and drain/fruit flies) throughout entire establishment in particular, dishwashing area, near syrups and in dining area.
Corrective Action(s): Consult with pest control company on how to eliminate flies.
Keep windows and doors closed to prevent fly entry.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Mini cooler was replaced with a new cooler that registered at 7.7 C.
Corrective Action(s): Ensure all coolers are at 4 C or below. Adjust/service as needed.
Do not use it to stock potentially hazardous foods until is able to reach a temperature of 4 C or below.
Cheese slices and individual cream packs were relocated to another cooler.

Follow-up inspection

-General sanitation has improved however more work is required. Continue cleaning all areas of the establishment, and focus on hard to reach areas.
-Two mini coolers were removed and replaced with one chest freezer and one fridge/freezer (see above).
-Ensure temperatures are recorded and documented.
-Foul odour still occurring in dishwasher area - grease trap to be serviced.
-Staff were able to describe the correct manual dishwashing procedures - good.
-Surface sanitizer available.
**DIshwasher has not been serviced yet. f you would like to remove the non-functioning dishwasher, please submit a proposal with an updated sanitation plan explaining how you will wash dishes, the types of dishes you use (ex. single use). Note: total number of seats in establishment: 16 seats inside, approx 20 outside.
-Staff have taken food safety training - good.
-Flour has been replaced in a reusable container that is in a clean condition.
