All fridges must maintain foods at or below 4 deg C:
-Walk-in cooler 3 deg C (eggs) -all goods maintained off the floor
-Walk-in cooler downstairs 2 deg C (eggs)

Hot held foods must maintain foods at or above 60 deg C:
-none at time of inspection

High temperature washer hot water sanitizer must be >82 deg C as per thermostat:
-checked and verified at plate level (71.9 deg C on first run)

Chemical Controls:
QUAT-type sanitizer dispenser/buckets must be maintained >200ppm as per test strips:
-checked and verified

Note: For all food contact surfaces such as counters, and dining tables -they must be cleaned and sanitized with your QUAT sanitizer -if a degreaser is needed then do so before the sanitizer is used. The degreaser is not a replacement for your approved sanitizer
