Observation: Most of the lowest shelves for goods and foods on the ground have been removed. A few shelves not adjusted yet or no plastic liner placed. Operator had plastic liners available and will place them by week's end.
Corrective Action(s): Keep foods off the ground and ideally all goods >15cm off the ground. Adjust the lowest shelves >15cm off the ground or place a plastic liner under so nothing goes through

Personal foods centralized to one fridge and placed on the bottom away from public foods
Shelves in the main kitchen have been cleaned and organized
Portable hot plate has been removed -operator will replace the self-contained exhaust unit instead
Bleach sanitizer spray >100ppm chlorine residual as per test strips -no wet towels observed on counters -single use cloth towels in use then hampered after use
Operator has obtained a infrared temperature gun for monitoring hot held foods -okay
