Observation: Plastic shallow bowls used to scoop ground plaintain products in dry storage room.
Corrective Action(s): Replace plastic shallow bowls with scoops to avoid direclty contacting the dry storage goods when scooping the product.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Main glass door cooler thermometer reads above 50F despite the fact that it is at 4C / 40F.
Corrective Action(s): Purchase a new thermometer that can accurately record temperatures.

Comments

Routine inspection conducted. Facility is in good sanitary condition. The following observations were made:

1. Temperatures (Max: 4C for coolers, -18C for freezers; Min: 60C for hot-holders). All temperatures meet health requirements.
- Front chafing dishes maintain 60C or greater
- Chest freezer at front and back at -18C
- Back glass-door cooler at 4C
- Beverage cooler up front at 4C
- Hot-holding unit up-front currently is out of service. When hot-holding unit is repaired, ensure it has an accurate thermometer placed inside and is able to maintain at or above 60C

2. Hygiene and Sanitizing
- Handwash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels at front and back-of-house, and inside restroom
- Restroom well maintained in good sanitary condition
- Bleach sanitizing pail available at 200 ppm chlorine residual
- High-temperature dishwasher sanitizes at final rinse temperature of 72C at the plate

3. Storage
- All food items inside cooler and dry storage area are appropriately covered with a tight-fitting lid, food containers are in excellent condition and are airtight
- Dry storage room is well organized
- Raw foods stored below cooked and ready-to-eat food items
- Chemicals stored underneath dishpit and in enclosed cabinet under handwash station

4. Pest Control
- No signs of recent pest activity at time of inspection
- Facility contracts professional pest control company to conduct routine monthly audits
- Last inspection conducted by company on June 15, 2018 did not indicate any pest activity
- Mechanical traps opened did not reveal presence of rodents or pests

5. Administrative
- Operator has recently taken the FoodSafe 1 Refresher Course on July 16, 2018 - excellent
- Permit posted - permit fees recently submitted to EHO

6. Recommendations
- Elevate bins storing pre-packaged products candy and dried goods for sale at least 6" off the floor for easy cleaning
