Observation: Observed items in the walk-in cooler and walk-in freezer that are not protected from physical contamination. Walk-in coolers/freezers have fans that blow cold air and is likely to have dust and other physical particles. All food items should be protected from all types of contamination at all times
Corrective Action(s): Required operator to provide adequate coverings/lids for all food items in both walk-in cooler and walk-in freezer.

Observation: Overall sanitation is okay but cooking area require more attention.
1. Old food and grease debris/build-up was noticed below and behind cooking machines.
2. Grease build up in the overhead hood noticed; not dripping yet but is close. Next service date is August 2022
Corrective Action(s): Required operator to clean the area to remove all grease and food debris. Regular maintenance must be made when accumulation is noticed.

Hot and cold running water available at all sinks
Low temperature dishwasher in good working condition; detected 50 ppm of residual chlorine at plate level after final rinse cycle
Test strips available on site to ensure regular testing
Under-counter coolers and walk-in cooler at 4 C or lower; walk-in freezer at -18 C or lower; hot holding unit (rice cooker) at 60 C or higher
Observed thawing of frozen prawns/shrimps at prep sink under cold running water; observed in the next sink thawing of red meat (raw) in cold water. Staff drained and changed the water at the time of inspection.
Sanitizer available in the kitchen as well as the front bar area; detected 100 ppm of residual chlorine
Ice machine in sanitary conditions
Discussed pest status with operator; active management is in place. Visits made twice a month by Orkin
