Observation (CORRECTED DURING INSPECTION): Samosas obtained from Diamond Sweets displayed in a hot holding case that was not turned on. Internal food product temperatures ~23 degrees C.
Corrective Action(s): Instructed operator to reheat the samosas in the oven and store in the oven with the warm setting at or above 60 degrees C. Ensure samosas after reheating is kept at or above 60 degrees C. Alternatively keep samosas in a fridge at or below 4 degrees C and reheat to over 74 degrees C in the microwave.
