Routine inspection conducted today:
Note: Operator has not started operating since initial inspection. Will be working hourly out of Core Kitchen and eventually going full-time.
No food is currently stored at Core Kitchen. When full-time, will be allocated 4 shelves in the walk-in cooler, 2 shelves for dry storage and 4 shelves in a freezer unit.
Reviewed how to determine if the Sink and Surface Cleaner Sanitizer is functioning with the test strips. If not at the optimal concentration, instructed to mix a chlorine sanitizer solution instead for sanitizing. Operator must sanitize work station at the start of the shift and have sanitizer available to use during preparation and cooking.
Planning to be offering take-out only.
Reviewed how to determine if the high temperature dish machine is functioning properly (able to reach 180F at the rinse temperature gauge) before using. If not functioning properly, must use the 2-compartment sink instead for manual warewashing.
Discussed the use of pest proof containers for the storage of dry ingredients.
Inspect work station prior to start for cleanliness/ pest issues and to address prior to starting each shift.
Will be working out of station 1, 6 or 9 when working hourly. Will have a designated work station once switch to full-time (once unit# 2 for Core Kitchen is completed).
