Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No chlorine sanitizer detected during final rinse cycle of the low temperature dishwasher.
Correction: Repair or adjust the dishwasher so that at least 50 ppm chlorine sanitizer is dispensed at the plate surface during final rinse cycle. In the mean time, all dishes washed through the dishwasher must be sanitized manually by soaking in 200 ppm chlorine solution. Mix 1 oz per gallon of hot water to make 200 ppm chlorine sanitizer in the sink. ( Immediately).

Dishwasher has now been repaired and contains 50 ppm chlorine at the plate surface during final rinse.
Chlorine test strips available and are being used to test dishwasher chlorine levels.
Javex ( Chlorine bleach) is now used as a sanitizer in spray bottles; tested 100 ppm. Good.
All spray bottles of sanitizer are now labeled. Good.
A paper towel dispenser has been installed above the hand sink across from the grill.
All raw chicken and meats are stored below any ready to eat foods and vegetables.
Walk-in cooler registered < 4 C.
General sanitation is satisfactory.
