All fridges are maintaining foods at 4 degrees Celsius or colder.
Walk in freezer is -18 degrees Celsius or colder.
Dishwasher final rinse reached 60 degrees at the plate surface and had a 100 PPM chlorine residual.
Liquid soap and paper towel at handsink.
Quat sanitizer measured 200 PPM residual in spray bottle.
Do not heat foods in warmer. ie. tapioca
Soups in warmer were 60 degrees Celsius or hotter.
