- Temperature Control: No concerns noted this date. Monitoring is being conducted.
- Manual Dishwashing: 4 Step - Quat based sanitizer: Sign noted. Monitor daily.
- Ensure all food contact surfaces are washed and sanitized after use or in a timely manner. (ie: As per SOP's) All implements are to be stored in a sanitary manner. (ie: above potential contamination.)
- Wiping cloth/spray bottle storage: Quat based sanitizer. Monitor. Solution is to be changed routinely.
- Food Storage: Any opened food/ingredients are to be kept stored in covered, food grade containers. Single use containers are to be kept stored upside down. Leave gaps along walls for an effective rodent control program,.
- Chemical Storage: Ok.
- Sanitary Facilities: Single use towels are to be kept inside of towel dispensers. Do not store on prep lines.
- Sanitation: Maintain routine cleaning schedules, including "hard to reach" areas. (ie: behind/under equipment - prep areas, etc.)
- Staff Illness/Hygiene: Discussed.
- Structurally: n/a.
- Pest Control: An active rodent control program is in place. Reviewed on site. Pest Control Reports are required to be reviewed by all store departments.
- Garbage,Recycling and Compost Storage: All items are to be stored in covered, rodent proof containers. All garbage is to be removed in a timely manner. (ie: Nightly)
- Food Safety Plan and Sanitation Plans are on site for review. Staff are required to be trained according to these policies and procedures.
