A routine inspection was conducted, the following observations were made:
- Coolers were 4C; freezers were -20C; hot holding was above 60C; thermometers present; and temp. logs done daily.
- High temperature dishwasher was 71.1C (at the plate's surface) during the rinse cycle, as per the min/max thermomter.
- Glasswasher had [I2] of 12.5ppm.
- Sanitizing spray bottles had [Cl2] above 200ppm.
- Food storage practices done properly. Foods stored in food grade containers; covered; date coded; in groups w/ raw animal proteins on lowest shelves w/ RTEs above them; and 6" off the floor.
- Food handling practices done properly. Utensils used to handle food and staff wash hands frequently.
- FIFO rule followed. No expired food in use.
- Hand sinks stocked with running hot and cold water, liquid soap and paper towels.
- FoodSafe certified staff present.
- Sanitation level is good. No signs of pests.
- All in order.
