=Walk-in cooler (4C) and domestic cooler (4C) measured < 4 degrees C and walk-in freezer (-15C) and domestic freezer (-11C)
=Soup hot holding (94.7C) at the time of inspection
=High temperature dishwasher had a final rinse temperature of 80.4 C at the dish surface (minimum 71 C required for proper sanitizing)
=Sanitizer solution at 500 ppm hydrogen peroxide (diversey viper) available in bottles. Operator has switched to Diversey brand Viper cleaner and no rinse sanitizer. Label indicates that the active ingredient is hydrogen peroxide and at 500 ppm, as measured at the dispenser, is adequate as a food contact surface no rinse sanitizer.
