Observation (CORRECTED DURING INSPECTION): Chemical sanitizer not adequate for food preparation surfaces.
Corrective Action(s): Wiping rags need to be stored in a container of bleach and water solution (1 tsp bleach per litre of water) when not in use. Provide one container of bleach and water solution for the kitchen and servery areas. Spray bottles for bleach solution were found to be broken and not capable of properly spraying the sanitizer. Replace damaged spray bottles. Operator corrected a time of inspection. Discussed with operator about cleaning and sanitizing food preparation surfaces after each use/task instead of once per day.

Observation: Mouse droppings on floor in basement.
Corrective Action(s): Clean up the mouse droppings on the floor at the end of the middle aisle in the basement. Clean and sanitize the floor after droppings have been removed. Mouse droppings were not found anywhere else. Premise is serviced by Orkin pest control once per month.

Observation: Food found under double door cooler in the basement.
Corrective Action(s): Clean up the food that have fallen onto the floor to prevent attracting pests.

General observations:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Hot holding units were over 60 degrees Celsius
Coolers and freezers were equipped with thermometers.
Food storage practices were generally good.
Storage areas were generally organized.
Hand sinks were stocked with liquid soap and paper towels.
All sinks were equipped with hot and cold running water.
General sanitation was satisfactory, except as noted above.
Bleach sanitizer had a chlorine concentration of 200ppm.
Low temperature dishwasher had a chlorine sanitizer residual concentration of 100ppm.
Chemicals stored in a safe manner.
