Observation (CORRECTED DURING INSPECTION): 1) Steamed rice rolls stored at room temperature at 25C.
2) Steamed sticky rice cakes stored at room temperature. The internal temperature measured at 45C.
Corrective Action(s): 1) Discard the food. Steamed rice rolls must be kept cold at < or = 4C or hot at > or = 60C.
2) Store the sticky rice cakes inside the cooler at 4C. You can store the wrapped sticky rice at room temperature for max 2hours with proper time stamping. An updated Food Safety Plan is required.

Observation (CORRECTED DURING INSPECTION): Surface sanitizer measured 0ppm chlorine concentration.
Corrective Action(s): The operator prepared new sanitizer at 100ppm chlorine concentration. You must have surface sanitizer available at all times to sanitize food contact surfaces (ie food prep tables).

Observation: Multiple food items (ie mushrooms soaked in water, rice paper) stored in bins that are uncovered and directly on the floor. One of the employees were mopping the floors nearby.
Corrective Action(s): Cover all food items with proper lids or plastic wraps. Store the food on prep tables. Store ALL foods at min 6 inches (15cm) off the floor to prevent cross contamination.

Observation: Too much clutter on the floors in the main kitchen (ie empty bottles, garbage bags, bins).
Corrective Action(s): Remove the clutter. Keep the floors clean and store all foods at min 6inches (15cm) off the floor. Implement a regular cleaning schedule.

Comments

- General sanitation is needs improvement. See violation section above.
- Back handwashing station supplied with cold/hot running water, soap, and paper towels.
- Three compartment sink available for manual dishwashing. Sanitizer available at 100ppm chlorine concentration.
- Dry storage area has adequate space and wire racks. Dry food items must be stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection. The operator implements own pest control management system.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers: < or = 4C
- All freezers: < or = -18C
- Thermometers available inside all refrigeration units.
- Missing daily temperature log. Immediately begin daily temperature logs for all coolers and freezers.
