Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] (Drain plugs were not available at the 2-compartment sink to fill it up with sanitizer solution. Operator was advised to use single-use clean plastic bags to block the drain and fill up the sink with 100 ppm chlorine sanitizer (bleach water) for the time being )

Follow up inspection:
-Two drain plugs were available on-site for the 2-compartment sink.
-Operator setup 100 ppm chlorine sanitizer in the second compartment of sink during the inspection.
-Operator had a spare shelving unit (steel wired shelving unit) on-site and stated that they would add this across the 2-compartment sink to air dry food containers. Previously, they were air drying equipment on the cutting board table surface.
-Operator purchased a probe thermometer. They cleaned and sanitized the thermometer prior to probing the meat during the inspection. Receiving temperatures were reviewed with the Operator.
-Cleaning improvements were made to the floor and walls near the 2-compartment sink, the floor of the walk-in-cooler, and the cutting board table surface.
-Operator has began writing a food safety plan and sanitation plan.
-Light inside the walk-in-cooler was replaced with a bulb in a cover.
-Light covers are still on order for the remaining uncovered lights according to the Operator.
-Meat was covered inside containers in the walk-in-cooler.

The following requires your attention:
1. Please submit a copy of your food safety plan and sanitation plan for review and health approval to the district Environmental Health Officer of Fraser Health. Correct within 1 month.
2. Make sure all light bulbs are encased in shatterproof covers. Correct within 2 months.
