Observation (CORRECTED DURING INSPECTION): 3 mini pizza in the lowest shelf of the hot holding unit measured with an internal temperature of 56C. 60C is required to properly hot hold potentially hazardous food. Staff did not know how to increase the temperature.
Corrective Action(s): Staff discarded the mini pizza. Do not use the lowest shelf in the holding unit it is able to maintain 60C or above.

Observation (CORRECTED DURING INSPECTION): Food surfaces sanitizing bucket was empty at the time of inspection.
Corrective Action(s): Staff filled the sanitizing bucket with 200 ppm quaternary ammonium sanitizer. Clean and sanitize all food surfaces on site.
