B) Mildew build up noted in ice machine
Corrective Action(s): A) Ensure sanitizer solution is readily available in all food preparation/handling/service areas
B) Discard the existing ice in the ice machine as well as food stains on the outside of the ice machine. Do a thorough cleaning of the inside of the ice machine. Ensure the ice machine is emptied and cleaned/sanitized on a routine basis (recommended minimum once a month).

Comments

- Premises makes fruit desserts and fruit smoothies.
- No food preparation/handling was taking place at time of inspection.
- All coolers were at 4C or less (Walk in, prep cooler, upright one door retail, display cooler...etc)
- All stored foods appeared protected (ie. off the ground, covered..etc)
- Back door was closed. No obvious sign of pest activity noted at time of inspection.
- Bleach available on site. 100ppm chlorine sanitizer available in a spray bottle for the back area.
- Manual ware washing procedures reviewed at time of inspection.
- Staff member on duty in operator's absence had foodsafe training
