Observation: Mouse droppings noted in a few areas - see violation code 306.
Corrective Action(s): Monitor daily for any new droppings or activity, and clean and sanitize as needed. Ensure all opened dry ingredient bags are placed in pest-proof containers with tight-fitting lids at the end of each day and kept off the floor. Also ensure any holes/gaps/possible pest entry points are properly sealed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Mouse droppings noted in hard-to-reach areas, such as floors underneath storage racks for dry ingredients and cleaning supplies.
Corrective Action(s): Ensure all floors are cleaned of mouse droppings and sanitize affected areas with a 1 part bleach:9 parts water solution. Monitor for new droppings on a daily basis, and clean and sanitize as needed.

Comments

- Monthly pest control is in place; pest control reports were available on-site for review. Ensure to continue with pest control services and to follow their recommendations.
- Hand washing sinks were properly supplied
- Three-compartment sink available for manual warewashing, sinks plugs were available. Quats sanitizer dispensed at sink at 200 ppm.
- Bleach also available for sanitizing.
- All coolers were measured at 4C or colder.
- All freezers were measured at -18C or colder.
- Food stored in coolers and freezers were properly covered.
- Dry ingredients stored in containers with lids. *Ensure any opened bags currently not stored in bins are transferred to bins (with lids) by the end of the day.
- Equipment maintained in sanitary conditions.
