Observation (CORRECTED DURING INSPECTION): Handsoap observed to be missing from the handwash station (back of kitchen by the utensils/ equipment) space. Hand soap dispenser not observed to be present
Corrective Action(s): Provide liquid handsoap. Ensure that handsinks are fully equipped with liquid soap, paper towels and hot and cold running water for proper and frequent handwashing

Observation: 1. Case of food (i.e. peanut butter, almond milk) under the shelves and cases of potatoes observed to be stored directly on the floor.
2. Bag of onions observed to be stored on the floor outside of the walk-in freezer. Staff was instructed to store bag of onion on the shelf. (Corrected during inspection)
3. Handle of scoop observed to be in direct contact with the flour and brown sugar which can introduce contaminants to the food. Instructed staff to clean and sanitize the scoops. Staff stored clean and sanitized scoop in a way where the handles are away from the food. (Corrected during inspection)
Corrective Action(s): 1. Ensure that all foods are stored at least 6 inches off the floor. Date to be corrected: August 11, 2022

Observation: 1. Old grease observed on the ventilation panels in the kitchen
2. Puddle of red liquid observed under the storage rack in the walk-in cooler
Corrective Action(s): 1. Remove the panels for cleaning. Ensure that these panels are maintained in sanitary condition
2. Clean the puddle and ensure that the premises is maintained in sanitary condition

Observation: 1. Full tub of water observed under the steamer. Chef indicated that the steamer is leaking and not working
2. Paper towel dispenser across from the hot holding units not observed to be working
Corrective Action(s): 1. Remove the tub of water. Staff indicated that technician has been called in to fix the steamer
2. Fix the paper towel dispener.

General observation

Kitchen
- All handsink (back and front) equipped with hot and cold running water
- QUATS surface sanitizer and dispenser measured to have a concentration of 200ppm
- Hot holding device not in use during time of inspection
- Two compartment sink with drain plugs observed to be available for manual dishwashing
- Low temperature dishwasher measured to have a residual chlorine residual of 100ppm
- All coolers (two standing coolers and walk-in cooler) measured to be at 4C or less
- All freezers (walk-in and chest freezer) measured to be at -18c or less
- No raw meats observed to be stored on top of ready-to-eat foods.
- No pest activity detected during time of inspection. Mice traps observed to be in place for monitoring of pests.


Cedar and Moss Coffee
- Handsink fully equipped with hot and cold running water, liquid soap, and paper towel
- Bleach water surface sanitizer measured to have 100ppm chlorine. Cloth observed to be fully submerged in the solution
- Ice machine observed to be stored in sanitary condition
- Mini cooler measured to be at 4C or less. Thermometer observed in the cooler
- Baked goods (e.g. cookies and muffins) observed to be stored in the display cabinet
- Premises in sanitary condition
- No pest activity detected during time of inspection

Note:
1. Ensure that staff have a copy of their FOODSAFE Level I or equivalent certificate onsite. Please email a copy of the FOODSAFE Level I certificate from the onsite staff who works in the kitchen and in the coffee shop
2. Temperature logs are available. Ensure that temperature of refrigeration units are checked twice per day and documented
3. Fan/ condenser unit in the walk-in cooler observed to be dripping (tub observed to capture any drips). Staff aware and already have a technician come in to fix this unit. Please ensure that no food is stored under this tub.
4. Ensure that the wooden floor plank by the dishwashing area is sealed to provide a smooth surface for easy cleaning
