Observation (CORRECTED DURING INSPECTION): Debris of dried onions observed on the vegetable cutter.
Corrective Action(s): Clean and sanitize the vegetable cutter immediately. Ensure vegetable cutter is maintained in a sanitary condition after use.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No hard surface sanitizer available at the time of the inspection.
Corrective Action(s): Instructed the operator to make 100-200 ppm bleach sanitizer (1 teaspoon of bleach to 1 liter of water) into 2 spray bottles. Sanitize all the food contact surfaces with the sanitizing spray bottle. Ensure approved hard surface sanitizer is available at all time during operation.

Observation (CORRECTED DURING INSPECTION): Liquid soap was not available from the soap dispenser at the kitchen area hand washing station.
Corrective Action(s): Replace the emptied liquid soap dispenser and ensure liquid soap is available at all times.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Observed only one staff washed his hands during the inspection period. Staffs were wearing gloves during food preparation.
Corrective Action(s): Wearing gloves do not subsitute hand washing. Staffs are required to increase the frequency of their hand washing. Hands must be washed every time before and after taking a break or swtich to a different task during food preparation.

Observation: Extensvie ice formation observed on the entrance door of the walk-in freezer. The rubber seals around the door was broken.
Corrective Action(s): Fix/ replace the rubber seal to reduce the likelyhood of ice formations around the walk-in freezer. The operator stated he already contacted a service technician. Correct by: Jul 17, 2019.

- Freezers (chest, walk-in) were functional.
- High temperature dishwasher registered 74C at the plate level.
- Ice machine maintained in a sanitary condition.
- Food items stored off the ground and covered.
- Permit is posted at a visible location.
- General sanitation satisfactory.
- No pest activities observed at the time of the inspection.

Note: Ensure to maintain temperature records for all refrigeration units on a daily basis.
