Observation (CORRECTED DURING INSPECTION): Knives stored on clean equipment storage rack were dirty and were stored in dirty bin.
Corrective Action(s): Knives and bin were placed in sink for washing and sanitizing at time of inspection. Ensure only clean equipment and utensils are stored on this storage rack, and ensure to clean and sanitize the bin/container used to store knives regularly.

Observation: Fish was thawing in container on the floor. Multiple uncovered food storage bins/containers in coolers and in dry storage area.
Corrective Action(s): Do not store any food or food-related items directly on the floor. Ensure all foods are stored off the floor and properly covered with tight-fitting lids.

Observation (CORRECTED DURING INSPECTION): Fish thawing in container on the floor; fish was still frozen.
Corrective Action(s): Do not thaw frozen foods out at room temperature. Thaw food in the refrigerator or under cold, running water only. Staff moved fish to cooler at time of inspection.

Observation: Small amount of mouse droppings observed behind upright fridge and chest freezer near back door.
Corrective Action(s): Remove droppings and clean and sanitize affected area with strong bleach solution.

Observation: - Ventilation canopy baffles require cleaning.
- Floors under and behind cooking equipment require cleaning.
- Floors in dry storage room require cleaning.
Corrective Action(s): Thoroughly clean and sanitize all areas noted above, and do so on regular basis. Keep floors in corners and storage areas free of clutter, such that floors can be easily cleaned. All items should be stored 6 inches off the floor.

Observation: Serving trays for holding hot plates were wrapped in tin foil, tin foil observed to be old and dirty.
Corrective Action(s): Do not wrap equipment in tin foil, as tin foil cannot be properly washed and sanitized.

Comments

- Hand sinks supplied with hot and cold running water, liquid soap, and paper towels. Paper towel dispenser in use - good.
- Bleach sanitizer solution available at 200 ppm in bucket for storing wiping cloths.
- High-temperature dishwasher reached 74C at dish surface during rinse cycle.
- Walk-in cooler, prep cooler, upright cooler, and sweets display cooler were maintaining temperatures at 4C or colder.
- Chest freezers were maintaining temperatures at -18C or colder
- Food organization satisfactory
- General sanitation satisfactory, however floors need attention (see violation code 306 above).
- Pest control in place, monthly invoices available onsite for review. *Ensure to check traps and monitor for new rodent droppings and clean and sanitize areas with droppings as necessary.
