301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Vegetable chopper stored on the metal wire shelving unit was observed to have food debris present over it. This chopper was not used today as per staff.
Corrective Action(s): Disassemble and wash, rinse, sanitize, and air dry the vegetable chopper; Correct today. Staff member placed this chopper into the first compartment sink unit during the inspection.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): 0 ppm QUATS sanitizer was measured in two spray bottles near the handsink and pizza prep. cooler.
Corrective Action(s): Staff refilled 200 ppm QUATS sanitizer during the inspection. Ensure the QUATS sanitizer concentration is measured using test strips and changed frequently to maintain it at a concentration recommended by the manufacturer.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handsink near the front service area lacked hot running water.
Corrective Action(s): Staff made adjustments to the handsink to enable access to hot running water. Ensure hot and cold running water are both available at the handsink to enable proper handwashing.

Comments

Permit to operate was posted.
Staff were observed washing their hands prior to handling food.
Handsink in the washroom was supplied with liquid soap, hot and cold running water, and single-use paper towels.
3-compartment sink was supplied with hot and cold running water.
200 ppm QUATS sanitizer was available from the dispenser, spray bottle near the point of sale system, and near the back area.
Walk-in-cooler and other refrigeration units were at or below 4 degrees C.
Temperature records were being maintained.
Fan covers inside the walk-in-cooler were in a clean condition.
Food was covered and stored off the floor. Dough was covered in food grade materials (saran wrap).
Upright freezer was at or below -18 degrees C.
Dry goods were stored in pest proof containers.
Chemicals were stored separately from food equipment.
Staff member with FOODSAFE Level 1 equivalent course training was present on shift.
No signs of recent pest activity were observed at the time of inspection.
IR thermometer was available on-site.
Note: Two probe thermometers were available, however were not in good working order. Please replace the battery or make the necessary corrections to ensure they are in good working order; Correct today.
