Follow up inspection regarding the upright freezer next to cooking equipment.
The regular walk in freezer is at at least -14C or colder and this is used for longer term storage of frozen food.
The smaller upright freezer is used for tempering frozen food and for short term storage only (1-2 days maximum) prior to cooking. Air temperature of this freezer is about -2C.
**There is an ice build up in this freezer so it may need defrosting. Check to ensure the freezer is working properly as per your food safety and equipment maintenance plan.
