Presently only food for display purposes and not for sale is stored in the display cooler. Potentially Hazardous Foods are stored in the functioning fridge at < 4 C behind the display cooler. Staff understand that no food for sale or consumption by customers may be stored in the display cooler until the refrigeration unit is repaired and can maintain internal temperatures below 4 C.
