Paper based inspection Report # 252698: *kitchen used for annual MCC Event @ Tradex (Sept. 15-16, 2023) this kitchen is where spring rolls will be prepared the morning of the event (event starts @ 5 pm) spring rolls will be transported and cooked at Tradex *inspection: -facility has hot/cold running water and is in sanitary condition -hand sinks stocked with liquid soap and paper towels (provided hand washing signs for posting at designated hand sink) -high temp dishwasher reached 71 deg C at surface; booster reached 82 deg C -upright (white fridge) registered at 2-3 deg C --clean off black spots on the door (appears to be mold) and seal worn out and not properly working consider installing new fridge as walk-in cooler is turned off when not in use (mainly used when there is event/function) -walk-in cooler empty (no PHFs) and turned off at time of visit Note: walk-in cooler was taking too much time to reach required temp. ensure to turn on walk-in cooler at least 1-2 days in advance when there is an event bleach available - use only plain bleach (e.g. unscented, no fibreguard, etc.)
