Observations:
- Walk-in cooler at 2'C
- All other preparation and sandwich coolers at or below 4'C
- Stand-up freezer at -19'C
- Hot-holding units measured at or above 60'C
- All food observed stored covered and at least 6 inches off the floor
- Raw meat observed stored away from ready-to-eat foods
- General sanitation satisfactory
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 74'C at plate surface (above minimum required final rinse temperature of 71'C)
- 2-compartment sink available with drain plugs and bleach
- Bleach sanitizer in pail and spray bottle measured at 200 ppm chlorine concentration with test strip
*Reminder: ensure sanitizer bottles are labelled appropriately
- Equipment observed stored in a sanitary manner
- Ventilation canopy observed recently serviced and in good sanitary condition
- Ice machine observed not in use
- No signs of pest activity during inspection
